Every year, we celebrate Chinese New Year with our business associates to wish each other a prosperous year ahead. Even with the Covid restrictions, we have arranged it without fail.
A native of Chengdu in the Sichuan province, Executive Zeng Feng has more than 30 years of experience, and is recognised by the Chinese government as a “National Advanced-Grade Master Chef”. Prior to joining Si Chuan Dou Hua in 1996, Zeng Feng had many accolades under his belt from various competitions in Asia. He has not failed to impress me over the years when we have dined here.

Auspicious Fugu Yusheng
「撈起」Lohei has the connotation of rising above the rest, taken from the Cantonese phrase “撈得風生水起”. The special ingredient was the fugu fish. And they had specially plated it like a cow’s face. Cheesy.
2/8 鸿图大展 花胶海參櫻花鸡湯
Double-boiled Sakura Chicken Soup with Fish Maw and Sea Cucumber
Forgot to take a photo of this dish as it was clear chicken soup with a tiny piece of sea cucumber and a small piece of fish maw.
3/8 鱼跃龙门 牛肝菌藤椒蒸海斑魚
Steamed Garoupa with Bolete Mushrooms and Fresh Sichuan Green Peppercorns
Because of Covid, every dish was served individually. The fish was overcooked in my opinion.
4/8 双星拱照 宫保龙虾火龙果
Sautéed Lobster with Dragon Fruit, Dried Chilli and Cashew Nuts
The “Twin Stars” 雙星 of this dish were the prawn ball and the dragonfruit ball. Basically it was gong pao prawns.
5/8 珠光宝气 京烤排骨
Braised Spare Ribs with Chinese Black Vinegar
Taking the same sound as 豬 pig and 珠 pearl, this pork rib dish was called “Bejewelled”. This was a slow-cooked, fork-tender rib with sweet meat that fell off the bone.
6/8 锦绣前程 原粒瑤柱扒西兰花苗
Braised Broccolini with Dried Scallops
Cannot associate this with the Chinese name of a “bright future”. However it was a delicious serving of broccolini.
7/8 满地黄金 川式腊味松茸焖饭
Braised Sichuan Waxed Meat Rice with Matsutake Mushrooms
Usually I skipped the main course, but the rice with waxed meat was delicious.
8/8 珍珠满盘 燕窩炖红莲 Double-boiled Bird’s Nest with Red Dates
This was a delicious Chinese style sweet soup 糖水 given a lux treatment with added bird’s nest. There was a generous amount of bird’s nest in every bowl.
香煎三色年糕 Pan-fried New Year Cake
New Year Cake 年糕 has the connotation of 「年年高昇」 (rising every year) and because they were cut in the shape of stars, it was even more auspicious. And this year it was made with three colour rice cakes.
