Noodles Bellagio @ Las Vegas

Chinese are the biggest gamblers in Las Vegas, and in almost all the casino hotels that cater to these high-rollers would be 24-hour noodle bars. This is the one in Bellagio called simply Noodles.

This marble-tile-floored restaurant features modern ceiling lamps emitting a golden glow, straw mats adorning the walls, back-lit glass jars full of noodles, friendly service and traditional cuisine with imaginative touches.

With authentic Asian dishes from around the country, Noodles offers a variety of flavours that few others on the strip can match. The decor was nothing to shout about, but it was definitely not a cheap take on Chinese culture.

Overseen by Executive Chef Patrick Lee, who had many years of experience in F&B Southeast Asia, the menu is not just noodles from Hong Kong like most of these establishments in other hotels on the Strip. You get Cantonese dim sum, as well as Malaysian roti canai with curry chicken, and other styles of noodles from the region.

I was amused to see the trolleys in more dim sum restaurants in Las Vegas than in Hong Kong. But instead of bamboo steamer baskets used in Hong Kong, these were stainless steel baskets.

Dim sum is as good as anything you’ll find in San Francisco’s Chinatown, nothing more. Still a yard away from Hong Kong or Guangzhou, but at 11pm in Las Vegas this is good enough.

Wonton Noodles 鮮蝦雲吞麵

I asked for a variation of their signature wonton noodles – I asked for dry noodles. After consulting the kitchen, they obliged. That’s what I liked about Las Vegas, they always ask the kitchen before saying “No”.

Luckily for me, the variation was simple; take the noodles and serve them dry with oyster sauce. Darling had it with the anchovies stock.

Beef Hor Fun in Oyster Sauce 濕炒牛河

I was surprised to find choy sum, straw mushrooms, carrots in this KL-style fried horfun. The kwayteow was deluded of any wokhei. It was like sautéed beef fillets in oyster sauce mixed into a plate of kwayteow.

These are called Roti Canai in Malaysia or Roti Prata in Singapore – pan-fried thin flatbread served with curry sauce. This was the best prata I had outside of my region. The curry sauce was a disappointment though.

Only if you must, but this noodle bar was constantly full. Book in advance, or order the food and bring it back to the room as takeaway.
