Tsunagu つなぐ @ Roppongi

After a night of some heavy drinking, we stumbled on a ramen shop near Roppongi Station. This is a relatively new store and I love exploring new stores!

This is a shop called 「麺物語 つなぐ」 Menmonogatari “Noodle Story” Tsunagu which had been in business for 6 years in Nakakagaya, Suminoe Ward, Osaka. They closed that shop and relocated to a new shop near Roppongi Crossing in Tokyo and renamed themselves as Roppongi Tsunagu. They opened on 28 Jun 2023.

The inside of the store is stylish and monochrome, with Mr Billiken from Osaka welcoming you at the box seats. As of today, there are only 22 seats in the restaurants with 6 counter seats facing the kitchen, my favourite seats in the whole place.

はまぐりと魚介のらーめん Shellfish and Seafood Ramen

The soup has good umami and is made with chicken and pork combined with seafood such as clam, 羅臼昆布 Rausu kelp, 伊吹いりこ Ibuki sardine, and 4 types of bonito flakes. The toppings included the usual scallions and leeks but also mizuna and red onion bits, the last one was very refreshing in the flavoursome soup. In addition, there are 3 kinds of chashu and a huge clam in the ingredients. 

The noodles are straight thin noodles made fresh daily by Mikawaya Seimen 三河屋製麺製 using domestic wheat flour. It has good bite and cooked perfectly al dente. Any softer you have to ask the chef to cook them longer, but I like my ramen that way.

They circle the chicken they used for the salt-based broth between 比内地鶏×名古屋コーチン×伊達鶏 Hinai local chicken x Nagoya chicken x Date chicken. Every bowl of ramen comes with this perfectly sous vide chicken breast chashu made with さつま純然鶏 Satsuma free-range chicken. The chicken breast chashu is tender and juicy and fragrant with yuzu.

The second piece of chashu was a roasted pork belly. It has a smokey flavour from the torching of the chashu at the last minute before serving. I wished it was torched a little longer.

The clams, sourced daily from Toyosu Seafood Market, the largest in the Tokyo region, are from Chiba Prefecture. Their plump texture is irresistible. And to round up the chashu, a low temperature cooked pork shoulder chashu. This was closest to what you get from other ramen stores, but it has the texture of cured ham. All three types of homemade chāshū enhance the charm of the ramen with their wonderful and unique flavours.

A wonderful little find, and hope they will survive the cutthroat completion among the ramen shops in Tokyo. Open until midnight, so perfect for a bowl of hot ramen before heading back to the hotel.
