The current form of mutton soup 水盆羊肉 existed since the Ming dynasty Chongzhen period (1628-44), and the characteristics of this particular mutton soup is the clear stock, and the ingredients are combined separately. These are traditionally accompanied by some 锅盖 baked wheat bread that you can break into small pieces to soak in the soup as they tend to be very dry and hard to eat on its own.
