Chaoshan Red Braised Goose 潮汕红 @ Shenzhen

Above the Departure Hall of the Bao’an International Airport in Shenzhen are some restaurants. There are two Teochew restaurants, but this is the more authentic one.

A neat row of braised lion-head goose hanged on the window shelf of Chaoshan Red Braised Goose 潮汕红, an obvious sight as you go up the escalator. It is sparsely occupied for lunchtime, and I started to doubt my choice as the busier restaurant also sells braised goose. The popularity is most likely because they have a wider variety of choices while Chaoshan Red serves only Teochew cuisine.

Darling’s favourite Teochew dish is the deep fried meat rolls 粿肉, and we always order this whenever we go to a Teochew eatery. She complained about the ratio of fatty pork with the rest of the ingredients. I didn’t mind the fats 🙂 but I have to agree that it was a bit too lacking of minced pork.

I ordered a quarter portion of the braised lion-head goose 潮州狮头鹅, and specifically asked for the lower quarter 下庄 consisting the thigh and drumstick. This portion in my opinion is more tender and moist than the breast meat. But if you like more meat for the same or lesser cost (the upper quarter is often cheaper), then order the upper quarter 上庄.

Teochew foie gras 卤鹅肝 (goose liver) is creamy and moist, and the aromatic spices gently whiff through each bite. They are often sold out and I was lucky to have some before I headed home. Under the goose liver were some goose blood pudding 鹅血 which were very smooth and flavourful.

Braised pig trotter rice 潮州卤猪脚饭 is a meal in one bowl, with a portion of chopped up braised pig trotter, pickled mustard greens, sliced tofu, ngoh hiang meat roll, half a braised egg and a small portion of baby Chinese cabbage. Ask for more braise sauce, it was really delicious.

Oyster omelette 蚝仔烙 is another Teochew classic, and the versions in China have deviated to suit local tastes. This one has a good ratio of egg and tapioca starch – it still has the crunch of the Swatow version and a familiar messiness of a homemade omelette.

And finally, Darling ordered her must-have double-boiled soup. Nothing to shout about, this soup was MSG-laden.

My trip to Shenzhen started with a simple Teochew meal, and ended with another simple Teochew meal. I am happy that this shop has opened in the airport so I know I can come slightly earlier for a proper meal.
