Flipper’s Ikseon @ Seoul

I am usually not a dessert person, but recently I have a sweet tooth. After a wonderful meal in Ikseondong, I chanced upon this Japanese dessert place.

Ikseondong 益善洞 is a popular historic neighbourhood in Seoul’s Jongno-gu district, known for its charming alleys and renovated hanok (traditional Korean houses), which now house modern cafes, restaurants, craft shops, and tea houses. 

Flipper’s is a Japanese chain renowned for its incredibly light and fluffy “Kiseki” (miracle) soufflé pancakes, which are so soft they can be eaten with just two forks, no knife needed. 

The chain, which originated in Tokyo in 2014, uses artisanal precision and high-quality Japanese ingredients to create its signature pancakes and has expanded globally, including in Singapore (at Bugis Junction), Hong Kong, Taiwan, New York, and Seoul.  

The pancakes are prepared fresh on the spot, using a precise formula to ensure they are constantly light and fluffy. These Japanese soufflé pancakes are supposed to be like eating soft and cottony clouds.

I came almost closing time so I had to do takeaways. I chose three flavours and ate them in the hotel room. I couldn’t finish all three, so I ate the original one first. The cream was vanilla flavour and not too sweet (which is the ultimate complement of a dessert). But I would not agree that the pancake was fluffy, perhaps because they were prepared quite earlier on. And when I ate the other two the next day, the pancakes were stiff and dense.

Perhaps it was unfair to eat them overnight, perhaps it would be better to eat the pancakes on the spot. I wasn’t impressed.
