Din Tai Fung 鼎泰丰 @ Suntec

Came to Suntec City with the family to visit Princesss’ graduation showcase at the Suntec Convention Centre. Princes picked to eat at Din Tai Fung, which has been her childhood go-to whenever we let her pick the place for a quick meal.

Ding Tai Fung (DTF) can be found almost everywhere these days. In Taipei where it all started, you can still see Singaporeans queueing for the original. But it is almost the same everywhere, like this one operating inside Suntec City near the convention centre.

DTF’s kitchen has always been a marvel. Every piece of dough is exactly 13g, each xiaolongbao is exactly 27 folds, and the steaming process  has been computerised so that they can manage those stacks of dumplings in the making. 

小菜 Appetisers

Customarily they would place a plate of the Oriental Salad which you have to reject if you do not want it. It is the price of a plate of peanuts or other appetisers in other Chinese restaurants in town for a dish that would only cost a fraction of the price in Taipei.

红油抄手 Oriental wantons

The wontons are the same as the ones used for their shrimp wonton soup noodles. Instead of serving them in soup, it is tossed with a spicy chilli oil that is not too mala.

酸辣汤 Sweet and sour soup

I always complained that their version of the sour and spicy soup does not come with duck blood pudding like in Taipei. And now with sizeflation, the portion had become smaller and the soup more watery. But a

小籠包 Special steamed pork dumplings

This is their signature dish, the pork dumplings that made the DTF empire around the world. There’s nothing to fault, it was as good as anywhere else due to their stringent quality control and precise SOP that define the number of folds, the amount of filling, and an AI-controlled steaming station.

There’s no pork in this soup dumpling, so the flavour is distinctly different from their signature xiaolongbao. The sweetness of the loofah did not really come through.

My brother picked the shrimp wonton soup noodles, something I have not tried in DTF.

炸排骨 Fried pork chop

And to accompany the noodles, you must have their signature fried pork chop. Unfortunately they do not serve it with Worcestershire sauce like they do in Taipei; the tangy sauce helps to cut through the greasiness.

Since DTF is operated by franchisee BreakTalk, they have introduced some local favourites like this harjeong (prawn paste) chicken wings. My own version is better, but these are not too bad since they were free (compliments of Citibank when you settle the bill with their credit card.)
