Nestled next to the Michelin-star L’Atelier Joel Robuchon, TON28 is a high-end modern Japanese cuisine restaurant in the über-highend mall of Bellavita. And there are many excellent Japanese restaurants in Taipei. No wonder they are pressurised to do well.
We ordered a set dinner.

A very steady amuse bouche. The seasoned whelk was braised in a sweet teriyaki like sauce. Tender and flavourful.

The abalone salad used a whole South Africa baby abalone, and was dressed with a sesame yuzu sauce. Also included figs and a few slices of snow crab. Very tasty.

Anago and flounder sushi featured a whole anago. The flounder was seasoned with sea salt.

Wagyu wrapped white asparagus, fig and ikura tomato was the piece de resistance. A5 Kagoshima wagyu was wrapped around white asparagus and smothered with a au jus reduction. Tomato stuffed with prawns and topped with ikura roe. Figs were in season and served as it is.

Pan fried silver cod was really well executed, crispy on the outside and soft on the inside.

Deep fried tofu with eggplant and dashi sauce was served instead of the usual chawanmushi.

Clear seafood soup was made from grouper and was really light and tasty.

The desserts were OK, just cut Taiwanese fruits and a small bowl of red bean soup.
