Casual, fine dining restaurant located in the heart of historic Main Street of Park City, Utah, 350 Main features contemporary American cuisine with ingredients sourced mainly from the region.

It is almost a ritual for us to come to 350 Main for our annual senior management dinner. 350 Main offers a refined blend of globally influenced cuisine in this exquisite new American Brasserie. Wonderful bar setting for signature cocktails and dining. It is almost certain to be a lot of food. Chef Matthew Safranek has unselfishly posted some of these recipes on his company Salsalluminatti’s website.

Appetisers

Crispy Cauliflower With Preserved Lemon, Harissa, Pine Nut Hummus

350’s Classic Tuna Tartare with Wasabi Cream and Avocado sesame dressing, pineapple soy sauce, nori chips, asian slaw

We shared a quintet of appetisers that were inspired by Oriental spices and seasoning and the one that stood out was the the crispy cauliflowers. The tuna tartare was almost like a soup, disastrous.

Roasted Bone-In 24oz Bison Ribeye with Trio of Sauces and House Cut Garlic-Parmesan Fries

With Montreal steak seasoning, chimichurri, béarnaise, housemate Worcestershire.

This was the first time I tried bison. No, this is the Wild West and the bison is not hunter. These are actually farm raised bison, just like any other cattle. A colleague was kind enough to “share” a small piece, not that there’s not enough to go around. It is a huge 24oz piece of meat with the bone like a tomahawk. Bison is a very lean piece of meat which makes the three sauces really welcomed. And as if there’s not enough, it came with a mountain of crispy chips.

With chimichurri, broccoli, roasted roots.

I choose for the safer (and smaller portion) 8oz beef tenderloin done medium rare. The mash is a hug portion. I wished there was more broccoli, that was smokey and grilled.

Sides

Roasted Bone Marrow, Summit Gin and Juice Marmalade, Crostini

Grilled Shishito, Feta Puree, Hazelnut Dukka, Olive Oil

The sides stole the show. With the roasted bone marrow, it was a good “moisturiser”, especially for the bison. And the roasted shishito was not sweet but spicy.

I travel to Park City twice a year – once in Jan when the snows are everywhere, and once in Jul when it’s autumn leaves everywhere. This time, I was surprised to see the early snowfall.

Remember that this is Sundance town, and during Sundance you can almost guarantee not to get a seat in 350 Main.
