One of the first meals I had in my first trip Salt Lake City ever, made memorable with great company. This is an American style bistro that served Italian-influenced, Mexican flavoured American grubs.
Twigs Bistro is found in a shop lot mall in a suburb near to SLC. In other place, Twigs is known as a bistro and bar. This would not work very well in über-religious town of SLC.
Kalua Pork Tacos

Kalua Pig is popular Hawaiian dish served at luaus where a whole pig is smoked in a sand pit with sea salt, banana leaves and koa wood. Instead of pulled pork, Twigs’ version came as a two kebabs.
Calamari A La Romana

Classic calamari rings given an upgrade with artichoke and other ingredients mixed into the pile. Made the calamari soggy.
Pinsas or Flatbread?
The word ‘Pinsa’ derives from the Latin word ‘Pinsere’, which literally translates to ‘push the dough by the hands’. Roman Pinsas are also known by some as Pinsa Romana – but they’re exactly the same thing. The base of a Pinsa Pizza is made using a different method to your usual pizza, and in return, this creates a unique end result.

Pinsa is described as ‘a cloud-like Pizza’ that has crispy textures on the outside and a super soft and scrumptious inside. The main difference between Pinsa and Pizza you will notice is the unique oval shape.

Buffalo Chicken Pizza

Buffalo sauce, mozzarella cheese, spicy pulled chicken, bacon, gorgonzola crumbles, celery and red onions served with a side of our gorgonzola dressing.
The dough is made from a combination of soy, rice and wheat flour which makes Roman Pinsa a much healthier alternative to traditional pizza. The dough production process differs from your usual pizza as it’s fermented for up to 72 hours and baked at a lower temperature. This ensures the dough is highly hydrated as it contains up to 80% water – leading to a number of brilliant health benefits!
Twigs Signature Burger
locally sourced Angus beef, honey-cured bacon, frizzled onions, white cheddar, lettuce, tomato, garlic aioli, brioche

I just had a quadruple by-pass six month before and was trying to eat healthy so I asked for an Atkin’s version – without the brioche.

It did took out some of the sugar from the carbo, but the finished result was still as rich with the excessive amount of cheese and extra huge beef patty.
Be aware, this place is an American diner, everything is dished out in ample serving. Ice tea is free-flow, but remember to tip the servers. The service was really friendly and kept topping up my Southern unsweetened tea.
