Carrying Singapore’s culinary flag proudly in Ginza is Singapore Seafood Republic, the only outpost in Japan that serves authentic chilli crab and other tzechar style seafood for well-travelled Japanese and the homesick Singaporean.

Established in 2010 at Resorts World Sentosa, this restaurant showcased the best of Singapore-style seafood. This was a collaboration between four of Singapore’s top seafood dining brands—namely Palm Beach Seafood, TungLok Seafood, The Seafood International Market and Restaurant (closed in 2016) and JUMBO Seafood.

Fast forward to 2023, the original restaurant in Sentosa has closed, the only ones left are these in Tokyo that was JV between Jumbo and a local lifestyle brand (MRS).

Besides the brand association, I don’t think anything else was still Singaporean in this store in Ginza. Singapore-style seafood was not a popular concept and they had to resort to buffet for lunch to attract the crowd. And dinner time was rather quiet for a busy corner in Ginza.

つぶ貝の冷菜 ジンジャーソース Cold Shellfish with Ginger Sauce

This was actually quite nice with the tangy sauce with the refreshing dollops of pesto to go with the clams.
カイラン菜の強火炒め Stir-fried Kailan Vegetable over High Heat

This was very nice, with the leaf of the kailan chopped up and deep fried, and then topped over blanched kailan with oyster sauce.
バーベキューキングプラウン Barbeque King Prawn

Imagine the sambal used for BBQ stingray on a tiger prawn, this was just missing a kaffir lime.
ロングペッパークラブ Long Pepper Crab

At first we thought it was black pepper crab, but it turned out to be Typhoon Shelter-style mud crab. If only the crab was larger it would be quite good.
チリクラブ&揚げパン Chilli Crab & Fried Bread

The piece de resistance was the chilli crab and fried mantou. This was Jumbo Seafood’s style, tangy and a bit too sweet for my liking. However for anyone who is homesick and craving for Singapore-style chilli crab, this would be the closest you would get. The crab was too small to make an effort to work through them.
シンガポールラクサショートヌードル Singapore Laksa Short Noodles

This was like Thai-style kwaychap noodles with laksa broth. The laksa broth was legit.
パティシエ特製デザート Patissier’s Special Dessert

And finally a plate of bits of cheesecake, chocolate brownie, fruits and ice cream to round off an okay dinner.
The damage was only $85 for two persons, really affordable given that this is Ginza. The only complaint would be the crab used; they should asked if we wanted to upgrade those to larger mud crabs.
