Huoxi 火璽 @ Shenzhen (2023)

I went there the last time in 2019 and then I have not been back to Shenzhen since. Now I am back, I decided to revisit one of my favourite hotpot restaurant.

Huoxi serves a Chinese-style hotpot with Japanese level of service, i.e. you can pick the stock base (mainly Cantonese-style double boiled soup base) and the ingredients you want for the meal, and then a service staff will prepare it for you like a high-end wagyu sukiyaki/shabu-shabu restaurant.

Once you settle down, a Japanese-style salad was served as an appetiser.

Step 1, you pick the stock you want for the hotpot. They don’t do multiple choices – every pot is one type of double-boiled soup.

花膠鸡汤底 fish maw chicken stock base – this was their best seller and signature hotpot base. Very rich and savoury, no MSG and I can vouched for that, I didn’t wake up with a MSG throat the next day.

Lots of fish maw in the pot. Perfect for those who need collagen as you can feel the stickiness between your lips after drinking it. There’s so much soup, and you can pack it back home for that next day stock for instant noodles.

After you have placed the orders, the condiments are presented and you can either pick what you want, or get the waiter to help you make what would be a fantastic sauce to go with your food. My favourite was their heibeehiam style chilli that went very well with everything.

As an added bonus, the chicken used in the pot of soup stock was chopped up and served. It tasted like the Hainanese poached chicken, so it wouldn’t be the original chicken used for making the stock.

A little snack while we wait for the stock to boil, the salt and pepper corn was quite good.

These pigeons were braised and then deep fried to create a juicy and tender bird with really crispy skill. Yummilicious.

Enough of the cooked stuff, we were here for hotpot.

Amazing marbling on the wagyu

Their ingredients were top notch, as evident in this wagyu platter, presenting with pomp and circumstance, dry ice and all.

海鲜拼盘 seafood platter – comes with grouper, pacific clams, and two huge tiger prawn (all live seafood), again perfect for two persons.

They will help blanched everything for you at table side. This time, the waitress was not too well trained and got some of the timing wrong, resulting in overcooking some of the ingredients. I recommend you do the beef yourself because I find the waiter (and most Chinese) likes medium doneness. They even shelled the prawn for you for a mess free dinner.

And to round up the dinner, lots of vegetable into the pot.

This is one of the best hotpot I have been to in Shenzhen, even in whole of China. If there’s one thing bad about this restaurant it would be their toilets. The last time I was here, I did not use the toilet, but this time I needed to use for an emergency and to my horror there’s no toilet seat. If you cannot squat, you have a problem. There’s no other toilet in the complex.
