Usually all-you-can-eat sushi is of poor quality, but not at Hina Sushi. This restaurant in Nishi-Shinjuku offers quality sushi with over 60 neta.
All-You-Can-Eat Sushi 高級寿司食べ放題

In 1989, the first outlet of Hina Sushi opened in Shibuya offering a new style all-you-can-eat sushi. Instead picking pre-made sushi from a buffet spread, Hina Sushi offers sushi made to order one piece at a time. There are over 60 toppings “neta“ that included more expensive items like chutoro (fatty tuna), uni (sea urchin), etc.
Round 1

Everyone at the table must order the buffet. You may order up to 20 pieces per round. As I was dining alone, I got to choose 20 pcs at one go. Sheer joy!

As part of Round 1, they served the chawanmushi (repeatable) and the special ingredient of the month, which in this case was the snow crab ズワイガニ zuwaigani, that is only served one time.

In addition, they offer a monthly seasonal ingredient like yellowtail ぶリburi, blowfish 真ふぐ fugu, winter mackerel 寒さば saba, rosy seabass のどぐろ noduguro, etc

Round 2

After you finished the sushi, you can then order Round 2. Again, you are limited to 20 pcs at one go. And started to pick some repeats.

(Bottom, L-R) Medium Fatty Tuna 中とろ, Red Sea Bream 真鯛, Flounder Fin えんがわ

Round 3

The third round and I realised that there are some daily specials on the blackboard (which are not printed on the order sheet that is written in English/Mandarin/Japanese). Luckily for me, I still had a bit of room inside of me to try them.

The miso soup and gari (pickled ginger) are available on request. There’s complimentary ice cream at the end, but I was done by then.

Overall, the neta are about the quality of Genki Sushi and other sushi chains. The rice is a bit excision, understandable as they want to fill you up quickly. But if you are dining alone, this is an excellent option to pick as many variety as you want.
