There is a very famous pancake shop next to Deoksugung Palace called Liège Waffle, after the famous waffles from Liège, Belgium.

This waffle stall has the perfect location across the palace entrance and there are always people lining up, it must have a good reputation, they are just non-stop busy.

Liège waffles are a variety of waffle developed in the Wallonia region of Belgium. It is said to have been invented in Belgium by the cook of the Prince of the city of Liège in the 18th century.
| Liège waffle | Belgian Waffle, aka Brussels Waffle |
|---|---|
| Liège waffle is smaller, the dough is a dense and heavy brioche, it contains pearl sugar. | Brussels waffles are lighter and dusted with powdered sugar. |
| Liège waffle is traditionally eaten plain | Brussels waffle is traditionally served with toppings |
| Liège waffles have a deeper divot and a rounded shapes | Brussels waffle is usually rectangular |
| Liège waffles are made from a raised dough | Brussels waffles are made from a liquid batter |
| Liège waffles can be eaten hot or cold | Brussels waffles soften as they cool |

Liège waffles are not like your normal cafe waffles (which is Brussel waffles), because they are made from dough instead of batter and much more chewy like a bagel.

I never liked cinnamon on dessert, but unfortunately I did not get to pick the prepacked 5-pieces of waffles. And it was not nice when cold.

Blueberry and cream cheese (which there’s a savoury and a sweet option) is the most popular topping, as you can observe from the number of orders. This topping is pretty look, and quite nice to eat. I can be rather messy to eat on the street of Seoul, but what the heck, it was so good.

Who doesn’t like peanut butter on their waffles? And sprinkle liberally with sugar coated peanuts? Sweet, salty, sticky, chewy – better than any peanut butter sandwich.

This is definitely the best topping IMHO. The dark chocolate was not too sweet, and the hazelnut crumples provided the crunch. There’s little bursts of saltiness with the rock salt in the waffles. And it tastes good even when it is cold.

The waffles are freshly made and very savoury. Some slightly unusual/excessive topping combinations are on offer, but the waffle itself is very respectable. I didn’t like the plain one and the maple syrup one; otherwise, the other toppings really enhanced the flavour of the waffles.
