Changi Airport is one of best airports in the world. On the floor above the disembarkation floor of T2 are a lot good eateries for that meal before you board your next flight. Tendon Ginza Itsuki is one of them and was the first to bring the concept of tendon to Singapore.

Japanese tendon 天丼 (short for Tempura Donburi 天ぷら丼ぶり) is a popular Japanese dish featuring tempura (battered and deep-fried seafood and vegetables) served over a bed of rice in a donburi (rice bowl). With freshest quality ingredients served in special porcelain bowls by Arita – a 400 year-old porcelain brand from Japan, tendon is often regarded as delightful one-bowl soul food meals for many Japanese around the world especially during summer.

The tempura was crispy and did not have an “old oil” musky taste in many poorer tempura restaurants. The non-spicy sauce was a sweet, tangy and savoury all at the same time and there was just enough of it to prevent the tempura from becoming soggy. There’s no separate dipping sauce like those tempura set meals in Washoku restaurants. And what I really liked was the deep fried egg – how did they keep the yolk still runny?

All Tendon bowls come with chawanmushi (egg custard), all the miso soup and pickled vegetables that you want.

There are two dining concepts in one shop in this T2 outlet – you can have tendon or you can order ramen. And so this free-flowing pickle was wonderful as I waited for my ramen.

Ramen Keisuke uses Japanese ramen with local soup bases like laksa, Hokkien mee and bak kut teh. I stuck to the original Ramen Keisuke’s classic tonkotsu ramen with flavoured egg.

I remembered this shop in Suntec City, which was very popular among students when it first opened because of all you can eat bean sprouts and hard boiled eggs. My friends and I would always picked the white eggs instead of the brown ones. They have kept giving the complimentary eggs and bean sprouts. I took a white egg.

Good eats, but this shop is before immigration. So remember to go up one level from the check-in counters, have a good meal before going through immigration.
