Arrived at the airport early as I was just staying in the hotel next door. One more ramen before I went home.

Chubu Centrair International Airport is an international airport on an artificial island in Ise Bay, Tokoname City in Aichi Prefecture, 35 km south of Nagoya in central Japan. This is the largest airport in Central Japan. And they have a full-sized Dreamliner in an annex building for educational purpose where children can learn about flying and airport operations.

A new collaboration between mabo tofu and fried rice restaurant Long-hu Dining and popular ramen shop Ikkoku Tsujido. As I was not familiar with Aichi-style ramen, I picked their No.1 seller, Sakigake soy sauce ramen さきがけしょうゆ. They also offer another popular choice, 台湾らーめ Taiwan ramen aka Nagoya-style ramen, which is spicy and covered with chives that looked suspiciously like tantanmen (which I would recommend another store in Tokyo.)

The chashu was nothing to shout about, and not very flavourful, but at least it wasn’t dried out. Chashu is not my favourite part of the ramen experience in most cases, so I wasn’t too fussy about it.

The moyashi was blanched too soft for my liking, but that’s how things are done in these parts.

The thick soy sauce and pork bone broth left a sticky mouthfeel from the collagen dissolved in the stock. Bits of fats can be seen floating on the heavy soup. You cannot drink it on its own, but it complemented the noodles very well.

Their noodles come in a variety of types: thin noodles 細麺, low-carb noodles 糖質麺 which they claimed to have 50% lesser sugar used, medium-thick noodles 中太麺, and extra-thick noodles 極太麺, and they do not use eggs in medium-thick and extra-thick noodles that are served with tsukemen or dipping style ramen. I liked that they cooked their noodles softer than other parts of Japan.

It is a well-executed ramen known for its strong soy sauce taste and rich tonkotsu soup, a worthy visit before leaving on a jet plane. And if you have some time, do visit the viewing gallery. It was a cloudy day so I didn’t get the blue sky shot.
