Breakfast at Nadaman なだ万 @ Tokyo

Nadaman is a fine dining kaiseki restaurant with many branches around the world in some of the best hotels. In Hotel New Otani Tokyo, they provide a Japanese style breakfast that was really wonderful.

Located at the Garden Tower of Hotel New Otani Tokyo, this Nadaman なだ万 offers Japanese-style breakfast. If you’ve spent a night at a ryokan (Japanese inn), you may have witnessed this elaborate spread of dishes for breakfast.

御献立 Breakfast Menu (Jul 2025)

Each dish is served as a light portion and is intended to not only fill you up but also obtain the necessary minerals and vitamins to keep you charged throughout the day. This format is called Ichiju Sansai 一汁三菜 (lit. “One Soup Three Dishes”), and is a form of washoku 和食.

From left:

  • 季節のお浸し切胡麻 Seasonal Sesame Blanche (Oitashi)
  • 胡麻豆腐 山葵 吉野酱油 Sesame Tofu with Wasabi and Yoshino Sauce
  • きんぴら牛蒡 枸杞の実 Kinpira Burdock with Goji Berries

Ohitashi お浸し is a Japanese cooking method that involves blanching vegetables in hot water, then steeping them in a dashi-based sauce. It is an integral part of a washoku. Kinpira きんぴら is a traditional Japanese side dish, most commonly featuring burdock root (gobo 牛蒡) and carrot, that is stir-fried and then braised in a sweet and savory sauce of soy sauce, mirin, and sugar, often with added chili pepper for a spicy kick and sesame seeds for garnish.

  • キャベツ ヤングコーン Cabbage and Young Corn
  • 蓮根 舞茸 Lotus Root and Maitake Mushrooms
  • 人参 ブロッコリー Carrots and Broccoli

The steamed vegetables were tasty on their own, given the wonderful agricultural produce in Japan. But the sesame dressing (胡麻ドレッシング ) provided can be used if you want more robust and nutty flavours to the vegetables.

焼物 Grilled Dishes

The main protein was a choice of grilled salmon or roast beef. Too early for beef, so I picked the salmon instead.

銀じゃけ塩焼き Grilled Salmon with Salt

銀鮭 Silver salmon‘s flesh is dark orange, and most of it is farmed off the coast of Sanriku 三陸沖. The fishing season is from summer to autumn, and it is characterised by its soft meat and moderate fat content. I wasn’t a fan of grilled salmon as improperly cooked ones can be quite dry. This one was moist and flaky, very delicious.

小皿 Small Plate

It wasn’t on a small plate but なだ万焼き海苔 Nadaman Grilled Nori Seaweed was something that I really enjoy over the years I stayed in Hotel New Otani. It’s on every breakfast buffet in the hotel. Nadaman has evolved from a kaiseki restaurant to become a food conglomerate. I still remember the first Nadaman I went to in Singapore’s Shangri-la hotel, and was totally blown away. This is definitely a trusted brand for kaiseki and entertaining important clients.

食事 Meal

For energy, you get to choose either 白御飯 steamed rice or お粥 rice porridge. I opted for the steamed rice as porridge

佐賀県産「さがびより」白御飯 Saga Prefecture’s “Saga Biyori” Steamed Rice

“Saga Biyori” is an original white rice variety developed and produced by Saga Prefecture in Japan, known for its large, glossy grains, firm texture, and slightly stronger viscosity. Cultivated using the region’s fertile land, abundant water, and favourable climate, Saga Biyori rice underwent ten years of research and development to achieve a high-quality, balanced taste and appearance.

香の物 Pickled Vegetables

Japanese pickles, or tsukemono, were originally developed to preserve food in ancient times, with salt-cured vegetables appearing as early as the Jomon period.

汁 Soup

田舎味噌汁 Countryside Miso Soup

The miso soup was made with a special miso – 田舎味噌 Countryside Miso from 根田醤油 Neda Soy Sauce. The miso is richer and sweeter than other miso as a result of a special koji. But what set them apart is the dashi. The delicate Kansai-style dashi taste is not a cooking technique that any restaurant can imitate. That’s the difference between a normal 700 yen set and this 3000 yen set.

From traditional Japanese cuisine to Kioi Nadaman specialties, this famous Japanese restaurant has continuously strived to offer new culinary creations to its patrons for many years.

Renovated in 2001, Nadaman boasts a generous view of the Japanese Garden and offers new recipes on a monthly basis, each reflecting the changing seasons of the year. Highly recommend that you come here for their breakfast.
