There’s the easy way – get a pack of Prima Laksa mix – and there’s the hard way of preparing everything from scratch following this excellent recipe that I have copied from Violet Oon. All you need is to add coconut milk and stock to the rempeh from the recipe. Of course the other challenge is to prepare the chilli and cockles.

Again the challenge is the rempeh for the soup base. I have an Indonesian helper at home and she can product these rempeh for me. And you need those ABC cicap manis and fried shallots for the authentic taste.

OK, I cheated. I used First Home frozen pratas. I always keep some at home as they are very versatile to produce those little cocktail sausage puffs for the children. The curry was a recipe by the made. So this wasn’t so authentic, no assam fish curry like those sold outside.
