This requires some level of skills. If you know how to make a carbonara from scratch you would not have any problem. It is critical to get the temperature and procedure right or you get lumpy eggs and sauce in the spaghetti. But if you get it right, you will get the creamiest spaghetti with lots of umami.

Tried this method by Gordon Ramsey and the fish turned out perfect 😉 The skin is crispy and the flesh is juicy and tender. The ratatouilles was a bit too mushy though.

I took a couple of sausages – in this case I used pork garlic sausage from Pan Pacific hotel – and removed the stuffing from the casing. I remodelled them into patties, fried an egg, and then assembled the patty, egg and cheddar in the ciabatta bun from Gardenia. Too bad I didn’t manage to get some muffins.

Some time later, when the CB measures were eased, I managed to get some proper English breakfast muffins from Jason’s supermarket and produce the right look.

Swiss chicken chop

This is not exactly Western food, because I learnt this recipe in Hong Kong. The marinade is made from oyster sauce, dark soy sauce and a little bit of Worcestershire sauce. It is the mix of East and West. You can replace the chops with chicken wings and the result is equally delicious.

Japanese Curry

Katsu Curry Don

Japanese curry can be made at home by simply buying those prepared Japanese curry cubes from S&B or House Foods (which to my surprise is actually the king of Japanese curry with over 70% of the market). The idea is to produce something like CoCo. All you need is potato (I recommend a hardy one like Dutch or Indonesian potato that can be boiled properly), carrots, onions and what every other meats or fish you like.

Curry Udon

You pour it over rice or udon, they are equally delicious and simple to make.
