Arrived late into Sydney, and the steak place we wanted to go to was fully booked. So we walked across to something dependable, an adult burger place called The Morrison.

Step into The Morrison and be transported to a timeless New York French Brasserie; bustling and boisterous, where everything’s more vibrant, tasty and happy. What was the old Brooklyn Hotel is now the beautifully refurbished Morrison Bar and Oyster Room.



Dine with friends at communal tables in The Oyster Room, an informal affair where you can watch centre stage as Australia’s finest oysters are shucked-to-order. The Conservatory is The Morrison’s open air terrace which offers a private but stylish setting under the stars, cocktail in hand and a la carte menu to feast on. The bustling Parlour is the destination that allows you to unwind the working week surrounded by friends for a long and late as you like. Executive Chef Sean Connolly’s international experience shines, reflecting his signature style of seasonal produce, cooked on the bone and in the shell wherever possible.


My companion was feeling under the weather, so we did not order any oysters on the shell, which is one of their signature and why people come. As a concession, I ordered an oyster martini instead. The martini was incorporated with the oyster liquor to give it the saltiness for the martini, and one fresh pacific rock oyster made me wanted to order more.
Classic Prawn Cocktail

They did it the traditional way – chilled boiled shrimps on a bed of shredded Romaine lettuce and a classic cocktail sauce. I really like th balance of sourness and spiciness in the sauce.
The Morrison ½ Pound Burger
dry aged 250g Angus beef patty, cheese, pickle, whole slice maple bacon, steak sauce & fries

The burger comes basically deconstructed with the pickle, thick cut bacon and sauce on the side. The patty was 250g and quite thick but cooked nicely, pink in the middle.

Without the sauce and the condiments, the meat patty was juicy and well-seasoned. But a burger is meant to be messy, and what a mess it was. The brown steak sauce was delish, but I would prefer thin crispy bacon instead of the thick cuts. Hey, they need to charge you by doing something different.

Very friendly service that kind of reminds one of a NY vibe. But the slow making dishes did stretch our patience as we were jet-lagged and tired from commuting from Melbourne, and the place was not even packed for a theatre night. The place to get a juicy burger with perfect chips; it’s not cheap for a burger but definitely a great burger. Nice place to sit and get a drink and watch the world goes by.
