Tempura used to be just a choice in a Washoku family restaurant in Singapore. As our acceptance and understanding of Japanese cuisine deepen, specialist tempura-ya starts to pop up like mushrooms after the rain.

Tempura Makino is a popular Japanese tempura chain and its first overseas foray was brought in by EN Group. It attempts to recreate exactly the same flavours and dining experience that made it a hit in Japan. Now you can have really good tempura before you fly off to your next destination at its Jewel branch.

Their tempura is made-to-order right in front of diners. You’d think such a venture would mean it will cost a pretty penny, but Tempura Makino prides itself on affordability. This even as it imports flour, dashi and dipping sauce, from Japan, and also serves free-flow grated yuzu daikon.

Tempura Makino also differentiates itself by offering items you don’t expect to see in a usual tempura joint. There’s the luxurious Uni Ohba 雲丹の大葉巻き, which wraps creamy sea urchin in a perilla leaf. The Oyster Tempura 牡蠣 uses Hiroshima oysters and was still sweet, plump and juicy even after being fried.

Vegetables Tempura 野菜ずくしの天ぷら came with butternut pumpkin, eggplant, broccolini, maitake mushroom, asparagus, lotus root, french beans and Corn and Vegetables Kakiage コーンと野菜のかき揚げ.

桜えびかき揚げ盛り合わせ Sakura Ebi Kakiage Platter was the seasonal tempura of the day. It was just the normal tempura sprinkled with the pinkish red sakura colouring.

It wasn’t as pretty as the photos, which showed a sakura tree made with petals and dried parsley and herbs. This was just a strange tasting mayo dip. I rather stick to the usual tentsuyu and yuzu daikon dip.

Makino Tendon & Soba Set 天井とそば定食 came with prawn, squid, maitake mushroom, eggplant, butternut pumpkin, french bean and egg served on half portion rice and half portion of zaru soba. Tempura Makino Singapore uses Nanatsuboshi rice from Hokkaido. The rice is light tasting and is considered a Grade A rice.

Compared to several other tempura we have tried in Singapore, the tempura here has a distinctively lighter batter which allows the freshness and quality of ingredients to shine through the dish.
