Tin Lung 天龍 @ Hong Kong (2026)

One cannot come to Hong Kong and not partake their heavenly BBQ roast meats known as siewmei 燒味. And Princess and I returned to our favourite one in Wanchai.

Wanchai area on Hong Kong island is the most concentrated region in terms of siewmei shops/restaurants per sq.km in Hong Kong, if not, the world. Opened in Apr 2023, Tin Lung Goose 天龍燒鵝 is the new kid on the block, right smacked in the middle of ground zero. But the chef/owner has a pedigree credentials; he was previously the siewmei 燒味 department head of Tin Lung Heen.

The most recommended things in the restaurant are its freshly roasted goose and BBQ suckling pig. Firstly, the roasted goose; the skin is crispy and meat is juicy, and the overall taste is not overwhelmingly salty, unlike the famous ones. I picked the lower portion (下庒) of the goose that included the thigh and drumstick and it was well worth the extra. BBQ suckling pig‘s skin is crispy and the meat is juicy and tender. Came with a delicious sweet sauce.

Besides charsiew, you can pair the set menu with almost all the possible combinations of siewmei 燒味: BBQ suckling pig 乳豬, roast pork belly 燒腩仔, roast pork ribs 燒排骨, standard BBQ pork charsiew 叉燒, marinated chicken 貴妃雞, soy sauce chicken 油雞, Chinese-style red sausage 紅腸, pig intestines 豬生腸, jelly fish 海蜇, and smoked hock 燻蹄.

I paired roast pork belly 燒腩仔 (best with the yellow mustard sauce provided) with fatty BBQ pork belly (which we called feicharnam 肥叉腩), those with a cardio problem be warned. The fats on the belly were all rendered and simply melted in the mouth like wagyu; a poor man’s wagyu no doubt. The crackling on the roast pork belly was spot on.

Instead of rice, you can also choose to pair your roast meat with instant noodle, and I would recommend 出前一丁, which a chicken flavoured instant noodle from Nissan Foods that comes with a very fragrant sachet of sesame oil.

And before leaving Hong Kong, we decided to have another pigeon, but this time we opted for the braised pigeon 鹵水乳鴿 instead of the deep fried ones. It tasted like a very gamey soy sauce chicken and kept very well into the evening when we ate it while watching the World Cup final in the hotel. Yes, we ordered too much, and packed the leftovers for supper.

Most Singaporeans would go to the Michelin-one just down the road, but the roast goose at this restaurant is exceptional too. They have more choices of siewmei and all are very highly quality yet affordable price. The queue is still long during lunchtime, a sign that they have kept at this quality and price point.
