Fullerton Hotel, since its reopening, has been quite disappointing with its F&B offerings. While its sister establishment One Fullerton was much better, the hotel was not somewhere one would go for a gourmet dinner. Until Jade went for a revamped.
For 11 years, Jade restaurant has offered diners an authentic Chinese cuisine of exceptional quality and hospitality of unforgettable warmth, amply earning for itself the revered reputation of its precious gemstone namesake. With its revamp in 2017, the restaurant upped the ante by unveiling a more focused culinary direction by Executive Chinese Chef Leong Chee Yeng and new interiors, enhancing the dining experience for connoisseurs.
Diners may now sample a menu that takes inspiration from the Tang Dynasty in an elegant Tiffany blue and white setting. First timers to Jade Restaurant have it easy when it comes to placing your orders. The restaurant has curated a menu highlighting Jade’s ‘Eight Signature Dishes’ which includes must-try items like the Crispy Roasted Pork Belly, Deep-fried Prawn with Wasabi Mayonnaise and Sautéed Diced Beef Tenderloin.
Crispy Prawns with Wasabi Mayonnaise and Mango Salsa
Their signature wasabi may coated deep fried prawn. The tangy mango salsa gave it that dimension of sweetness.
Crispy Diced Chicken with Spiced Shrimp Paste
虾酱鸡 given an upgrade into harjeong nuggets. What a delightful dish.

Coconut milk on sweet and sour soup?
Baked Alaskan Cod Fillet with Premium Soy and Honey Sauce served with Housemade Pickled Cabbage
Instead of 梅菜扣肉, it’s 梅菜扣鱼.
This was the highlight of the evening. The fatty cod fish was matched with the preserved cabbage which took away some of that greasiness.
Roasted Peking Duck served with Caramelised Orange Peel and Condiments
Not the whole duck for the dinner set, just two pieces each.
Crispy Roasted Pork Belly
“Interesting” presentation, almost like a coffee shop roast store. Presentation aside, the pork belly crackling was crispy and the meat tasty.
Stewed Spiced Pork Ribs with Housemade Golden Mantou
Sorry, the photo was blurry because my guests were all complaining about my photo taking. The rice was like 京都排骨, a savoury sweet and sour sauce that you can mopped with the provided mantou.
Stewed Housemade Beancurd with Angel Gourd
It tasted like fish tofu, but the combination was very tasty. A simple, but delicious dish.
Sautéed Wagyu Beef with Crispy Garlic in Black Pepper Sauce
A less fanciful name would be 姜葱牛肉, but with upgraded ingredients.
Simmered Rice Vermicelli with Fish Broth and Sliced Garoupa
It was not just garoupa, The flavours came from the shiitake mushrooms, prawns and a beautiful stock.
Chilled Cream of Mango with Green Lime Jelly with Honey Caramelised Banana
Think of the Honey Caramelised Banana like a piece of goreng pisang coated with honey. This was the highlight of the dessert. The classic Chilled Cream of Mango with Green Lime Jelly was updated with bits of lime jelly instead of grapefruit and served with a scoop of vanilla ice cream.
Not to be confused with the Jade Dragon in Macau, that’s the 3 Star Michelin restaurant and the two have no relation at all except they both served Cantonese cuisine. The price here is Micheline level, but the quality is not quite there yet (just Plates).
