Konjiki Hototogisu was founded in Tokyo by Master Chef Atsushi Yamamoto and was awarded the Tokyo Michelin Bib Gourmand Title from 2015 to 2018 and Michelin star from 2019 to 2022. Ha-oh Hototogisu is the third outlet in Singapore and specialises in king crab ramen.

Like the name suggested, Quattro Meat Ramen came with springy ramen and flavourful broth with some Iberico charsiu, smoked duck breast, meat balls and Iberico wantons. Found some mini sized shrimps in the broth, no wonder it’s filled with umami. The charsiu was dry and tasted like processed ham.

The pork meatball was as big as a ping pong and reminded me of Italian spaghetti meatball.

The wanton was like the ones from the coffeeshop wanton noodle stores, without any shrimps.

And the smoked duck breast tasted like those made in a factory. So the quattro meat was really just about their charsiu.

The gyozas had too much ginger in them.
So call me old-fashioned, but a good and proper ramen does not need all these fanciful additions. Without them, the ramen and the broth were still delicious.
