A return visit after quite a while, Kingsley is one of my favourite steakhouse in Australia. They serve really good steaks with service to match.
Kingsleys is renowned for its premium beef selection at a reasonable price. They are prepared in the simplest manner, just grilled with salt over charcoal grill. The meats are sourced from around Australia. While their wine list is not extensive, Kingsley is not as expensive as Meat & Wine Co. yet serves very good quality and well-prepared steak in a classic steakhouse environment.
Entrees
I once commented that their entree selection was not great, I now take that statement back. This evening’s dinner, we were treated to some very delicious entrees.
Roast Garlic Tiger Prawns, smoked Chilli Butter

The prawn was roasted in the chilli butter until it was slightly crisp on the outside but not burnt. The paprika infused butter made the prawn really tasty – heat, umami, buttery flavours.
Twice baked truffle Brie Souffle, poached pears & rocket

These light-as-air souffles bring a touch of class to any special occasion.
Confit Pork Belly, Fennel, Pomegranate, Apple, Pork Scratchings

Thought it would be like roast pork belly, but the pork skin was made into a puffy crackling. The pork belly was fork tender. And the salad was like a really delicious achar (Malay pickled salad).
Steaks
Havericks Dry Aged Beef, NSW, Dry Aged Rib on Bone Pasture Fed 400g

I selected the Havericks Dry Aged Rib on Bone Pasture Fed from NSW, all 400g of goodness. Dry aged is a special technique of hanging the whole beef primal up to aged in temperature and humidity controlled environment for the meat to slowly dry the exterior. In the process the meat develops a nutty and more intense flavour profile while increasing the tenderness as the meat breaks down over time.

Overall a good steakhouse with really good service. The meat was well-executed, the correct doneness, and great sauces to accompany the steaks. The standard of the sides and entrees have improved, evident from this particular visit. The place was really quiet, except for a few tables. But still the kitchen and servers pulled all the effort to make sure our evening was really enjoyable.
