Mrs Pho @ Orchard

We were having a bandsmen reunion when our resident conductor came for a visit. He is now staying in China, so someone suggested we had Vietnamese instead.

Having run five outlets in Singapore, Mrs Pho House officially opened its doors at Takashimaya September of 2021. Mrs Pho brings the best of both Northern and Southern Vietnamese cuisine under one roof. Here’s what we ate that night.

Restaurant by the Aunties

Being born as a refugee in Vietnam in 1979 when there were no papers claiming to any state back then, Hoang Ha, Co-Founder of Mrs Pho, lived through a difficult childhood when food was scarce and his home country was in turmoil from the tails of the Third Indochina War. But his determined parents fought hard for the family’s survival despite the adversities. Fast-forward to today, he has his own restaurant and aims to bring homemade Vietnamnese food international.

The Dinner

The Taka shop is helmed by Chef Linh—a third-generation Vietnamese lady trained in various Michelin-starred restaurants in France and, of course, with her very own mom—the restaurant was brought to life with the main intention of wanting to serve traditional Vietnamese food in Singapore. Chef Linh wanted to serve familiar Vietnamese “childhood food” seldom found in Singapore, many dishes with influences from Chinese and French cuisine.

The rice roll was quite thick and soggy. Not much in the roll except for the boiled vermicelli and some lettuces, the prawn and other meats were quite sparing.

The soup was quite murky. The side bowl of tendon came with a ?? poached egg?

Grilled beef short rib with Pho spices rub and sous vide for 36 hours. Sliced beef, beef ball and tendon with secret recipe broth boiled for 12 hours

Again strangely murky but very flavourful broth. The short rib was fork tender and full of flavour.

Scallop was quite big but fresh; I can be certain that they are frozen scallops.

My favourite dish for the evening, I was surprised to get tonkin jasmine in a restaurant.

Afterthoughts

One of the regular in our group said that the quality of food has dropped tremendously. Some of the dishes like the pho and soup were reasonably delicious and given the prices, one would have expected the quality to be on par. The seafood was really below par. The service staff were very polite and attentive, but not enough to save the experience. I would just stick to the pho and soup.
