Ganjang Gejang Delivery

Raw crabs marinated in soy sauce or ganjang gejang 간장게장 is one of my favourite raw dish in any cuisine. And during the Covid period, I didn’t have the chance to eat it from Korea. Finally a friend pointed me in the right direction and had them delivered to my home.

Raw crabs marinated in soy sauce – Ganjang Gejang 간장게장

Ganjang Gejang 간장게장 is a traditional Korean dish made by marinating fresh raw crabs in a mild soy-sauce based brine. The brine sauce is boiled and cooled down 3 times a day for 3 days to kill all germs and then used to soak the raw crabs to transform the succulent meat.

“Rice Thief” 밥도둑

Gejang is traditionally eaten with a bowl of rice. Koreans refer to this dish as a “rice thief” (밥도둑) because your rice will quickly empty as you suck the flavor-packed crab meat out of the shell. The crab-infused brine is also delicious mixed with the rice or as a sauce for other dishes.

Gejang 게장 is a variety of jeotgal, salted fermented seafood in Korean cuisine, which is made by marinating fresh raw crabs either in ganjang (soy sauce) or in a sauce based on chilli pepper powder. The term consists of the two words; ge, meaning “a crab”, and jang which means “condiment” in Korean.

The best way to eat a crab

Personally I prefer the soy sauce version better, you can simply suck everything from its shell. The umami and sweetness from the raw crab combined with the salty earthy flavours of the soy sauce was totally satisfying. But do keep some plain rice on standby, it is really salty like drinking soy sauce with a seafood flavour.

Banchan

The set we ordered came with some banchan. These side dishes are quintessential in a Korean meal to provide variety to the main dish. And similar to the Japanese, Koreans do not eat their rice plain and need a good mix of kimchi or other pickles.

Jap Chae 잡채 Glass Noodles with Vegetables

Jap Chae 잡채 sounds like how we say mixed vegetable in Hokkien chapchoy 杂菜 but the similarity ended there. It is more like a glass noodle dish that a mixed vegetable dish. It is similar to the Peranakan chapchoy in terms of the use of sweet and savoury condiments.

A wonderful Korean meal

Overall, a very good meal delivered straight to the comfort of your home. Will order again.
